Chili Mac & Cheese Casserole - A healthy version of a favorite comfort food

Here is another great recipe using blended cottage cheese. Blended cottage cheese is so versatile. From mac & cheese to high protein queso or ranch dip, blended cottage cheese is helping people enjoy some of their favorite indulgent foods in a way that supports their health and wellness goals.


My new favorite food prep meal is this healthy high protein, high fiber chili mac & cheese casserole. Like a lot of foods I make, this freezes really well so I can still have a healthy, enjoyable meal when I don't have time, or I don't want to cook, and for those long days away from home. I almost always have a lunch cooler with me with healthy snacks and a meal so I don't end up eating out frequently or not eating for most of the day.


Like most recipes I share, ingredients used can be replaced with others based on personal preference. I've added green chilis to the mac & cheese before for a nice extra kick and more vegetables. For onion lovers, try adding caramelized onions to the Mac & Cheese. Adding a serving of vegetables on the side makes this a complete meal. My favorite vegetables to add to my meal prep is 1/2 cup frozen mixed vegetables & 1/4 cup of frozen edamame, adding 100 calories, 7 grams of plant-based protein and 4 grams of fiber. Lower calorie vegetables options that would go great include green beans, broccoli, roasted zucchini, or a green salad.


This recipe starts by making the simple turkey chili, that was recently posted, in advance or using your favorite high protein chili, then making the cottage cheese mac and cheese and baking them together into a casserole.
