I hopped on the blended cottage cheese bandwagon and started trying it in new recipes. Most Sous Vide egg bites and egg muffins are high in fat and calories for how much protein you get. Many include cream cheese, which increases the calorie and fat content but not protein. While the texture is excellent, the nutrition, and to me personally, the flavor, isn't that great for a really quick and easy breakfast or snack on the go. Replacing cream cheese with blended cottage cheese gives these egg bits a similar texture but much higher in protein and low in fat.
