Cary Cuevas, RDN, LD, CPT
Hi! My name is Cary and I've been a Registered Dietitian Nutritionist and Licensed Dietitian in the state of Oregon since 2008. Since becoming a Registered Dietitian, I've continued learning and growing through continuing education, including becoming a Certified Personal Trainer and Certified Medical Exercise Specialist. My work experiences and passion for helping our communities live healthier lives was the inspiration behind HealthyU Nutrition as non-profit organization.

My Education and Career:
My journey as a Registered Dietitian Nutritionist began at Mount Hood Community College in Gresham, OR, where I earned my Associate Degree. I continued my studies at Oregon State University, graduating in 2007 with a Bachelor of Science in Nutrition Science and Food Service Management.
​
In 2007, I was accepted into the Oregon Health & Science University Dietetic Internship Program, completing over 1,250 hours of supervised practice and coursework. After passing my credentialing exam in 2008, I officially began my career as a Registered Dietitian Nutritionist.

Professional Experience
​
Oregon State Hospital – For nine years, I worked with residents to improve their health and wellness through personalized nutrition plans, group education classes, and menu development with the Food Service team.
​
Oregon Food Bank – I then spent two years managing the Statewide Nutrition Education Program, traveling across Oregon to help partner organizations bring nutrition and cooking skills programs to their communities.
​
HealthyU Nutrition – Inspired by my experiences, I founded HealthyU Nutrition to combine my passion for working one-on-one with individuals and developing community nutrition education programs for those with chronic health conditions.

Why I Started HealthyU Nutrition
Too often, people newly diagnosed with conditions like diabetes, hypertension, or kidney disease are talked at by healthcare professionals rather than supported with the tools they need to succeed.
​
HealthyU Nutrition was built on the principle of providing support, guidance, and real-life skills so people can take control of their health, improve their nutrition knowledge, and build the confidence to create lasting change.

Giving back through community education:

Community Nutrition Education & Cooking Program
Our program is designed to make nutrition education engaging, practical, and hands-on. Using a facilitated dialogue approach, classes encourage active participation and constructive conversation.
Each session includes:

A focused discussion on a specific nutrition topic

Guidance from a Registered Dietitian Nutritionist

A group cooking activity that reinforces the day’s lesson

Ingredients to take home so participants can recreate the meal and practice their new skills
This program helps participants build confidence in the kitchen, apply nutrition knowledge in real life, and take meaningful steps toward better health.
